Yeah he was very much not seen as a top talent when young. In some respects his story is a bit similar to Ndombele with him not really making it at first but then fighting through adversity to make it to the top level. At his best at Frankfurt he was scoring and creating at an event clip and he was just always a flipping menace. I actually think he's a super interesting gamble, he's big, quick, reasonably physical, seems to assist as much as he scores and is very effective in the air (another weakness area for us), can play anywhere across front line.
Clearly PSG hasn't worked out for him (hardly the first there), seems to be a bit of a late bloomer, if it works, it would be a huge win. Bonus, he's accustomed playing with a chicken badge already.

Admittedly I haven't watched him at PSG but I wonder if they've mistook him for a CF to replace where Mbappe had been playing? He's not really an out and out striker although he can do a job there.

You are joking right? They are widely known for not having a clue about the stats, most of the players moan about them every year.Game, not 100% scientific but usually a good general indication and the players seem to care about it ..
If you are going to go by statistics on a game then football manager is the one you want, they have genuine football people for most of the teams who give genuine as close as possible “realistic” stats, its literally their job to record stats.
