Christmas Dinner

For great crackling slash the skin every 5mm with a Stanley knife and then rub with salt.

Do that a good couple of hours before cooking, making sure you get the salt in between the cuts, then rinse of the salt two hours later.

Take paper towels and dry the skin, once it looks dry, pour half a pint of oil in the oven dish and place in oven so it gets really smoking hot

Whilst waiting for the oil, go get a hairdryer, salt again (not as much salt though) then dry the skin even more with the hairdryer because there will be more moisture that the paper towel hasn't picked up.

Trick of a great cracking is that its dry as dry can be.

Then you take the hot oil and pour over the skin, then do it again 3 more times.

Place in oven without the excess oil on 220-230 for 25 min skin should puff up and look like crackling, then turn down to 180 for rest of time depending on size of joint.


Throughout make sure you have the fan on the hood going.

It's a Muslim country, my work has said only those who celebrate Christmas get the day off as holiday - that means 3 of us - and while the shops sell Christmas stuff it isn't really a big deal.

hmm.. falls on a tuesday, my weekend is thursday and friday.

If my girlfriend is away I will probably just go to work.

what do you do DHSF? OXO tower Ive never been but know its fricking expensive. My company party was on Friday at some stossy hotel in the West End, black tie affair and Alistair McGowan was there with 2 dancers from Strictly. I decided not to go as I wanted to see this bird that blew me out in town.... DOH!!!

but its pretty boring. Round my ex's they will be playing drinking games etc and we would have a right laugh.

Got to be the traditional Turkey with all the trimmings. When I was at work I had a real difficult time trying to avoid Turkey lunches as was entertained by suppliers most days in December, our staff do was nearly always a curry followed by how could standup longest, oh happy days.
 
Every Christmas I make it an ambition of mine (which I tend ot achieve) of trying EVERY single christmas sandwich out there (obviously over a two month period). I keep a track record of which is the best christmas sandwich.

My research ranges from eating sandwich at Pret, Eat, Marks and Spencers, Sainsburys, Tesco, Asda, Costa, Starbucks etc etc etc You name it I have eaten it.

Best sandwich by far is the Pret Turkey Feast - its fudgein fantastic.

Dreading christmas this year tbh. It was actually my favourite time of the year but since my dad passed it's not as special anymore. Me, my mum and my little brother went to my cousins last year because neither of them wanted to stay at home for the first christmas without my dad (i preferred to stay at home as i'm not a fan of mingling with countless family members tbh) but this year i definately want to spend it with my mum and bro only (don't even want to spend it with my girl).

As for food i'm not a big turkey fan....i love lamb though and thats what we usually have.

Im the same i love my wife and son and 2 of my three sisters but i can not be doing with cousins or the whole niece nephew things. They keep having children and i can never remember there names and if the wife is not standing next to me to tell me i end up looking a right plonker. Reckon christmas is best spent with just close family.
