We've tended to do it more than most other clubs in the last decade and a half although most were by Harry - Defoe, Keane, Pleaty's favourite - Shimbomba, Kaboul and Bale. Only Defoe could really be considered a success out of those. Maybe Kaboul for scoring the winner at Woolwich.
I'm still sort of excited about the possibility of Eriksen though.

This. A 6 month punt to see if he rediscovers his mojo, fits into the Jose style would not be an unreasonable gamble, especially if we can shift some other dead wages to offset the cost. He has to want it though, if Inter are paying him a big whack he should be prepared to take a short term cut to get his career back on track. Not 100% sure where he fits though, if Ndombele could partner PEH we could open up a position for him or Dele. Lo Celso looks like he’s out for a while so no guarantees he will back in contention any time soon but I think he’s more effective deeper any way.
Eriksen can play deeper, I'm not sure he starts every game but when we want more possession, when the opposition sits in, PEH +more creative player would work with a runner/passer higher up. Could be PEH +Eriksen/Dele deep with Ndombele up or PEH +Ndombele with one of the other two up front.

Yes and certainly not much different to winks on the physical side, I’d be a little worried about his tackling. What would tip it for me is he used to be a threat with his shots outside the box and that is something we have missed with any of Dele, Lo Celso or Ndombele playing as the furthest forward midfielder.
